Who doesn’t like the occasional party? A couple of weeks ago Scottish whisky The Naked Grouse asked me if I wanted to host a party on a secret location in Copenhagen, even though I am not the big drinker, I jumped the opportunity. Again, who can say no to a party, one where I didn’t even have to clean the next day.
So Friday night, 40 something people showed up at The Naked Bar, a popup bar in the meat packing area in Copenhagen to taste some pretty amazing whisky drinks. You might think, “ewww… I don’t like whisky”, but 9 of the coolest bartenders around Scandinavia had created the tastiest drinks. Everyone at my party seemed like they really liked them.
My favourite was the Pyrofilia! created by Jesse Terenmaa, Grotesk in Helsinki. Super fresh and somewhat easy to make yourself.
Makes 1 (but the syrups will last for a lot more)
50 ml Naked Grouse
25 ml Lemon juice
15 ml Charred pineapple syrup*
15 ml Burned butter syrup**
Add all ingredients to a shaker, shake, strain into rocks glass filled with crushed ice and garnish with dehydrated orange/pineapple.
*Charred pineapple syrup
Cut ripe pineapple into wheels, burn them using grill (use big green egg if possible). Put 1 liter of water into saucepan, let it boil, add 1kg of sugar and boil until sugar has dissolved. Add pineapple wheels into saucepan and boil it for 3 minutes. Take saucepan off heat and let syrup cool down. Once cooled sieve the pineapple chunks and bottle.
**Burned butter syrup
Put 150 g of butter into saucepan on medium heat until the butter has clarified, add bit more of heat and stir the butter furiously until butter has turned really dark. Add 1 liter of water to butter and turn the stove into medium again. Add 1 kg of sugar and stir the syrup until sugar has dissolved. Take saucepan off heat and let it cool down. Once cooled sieve syrup through kitchen cloth and bottle.
